Roothy, you're back. As soon as I saw your post I got up and ate a grapefruit. Okay, 1/2 a grapefruit, the 3 smews are here and I didn't feel like cutting up four so I just cut up 2 and said 1/2 is a serving. I have been trying to practise the 5 a day but so far have only been successful on the weekends. I can't remember if anyone else said they were going to give my challenge a go too.

Yes, I'm back, and let's get to the veggies! Let's see, I have to account for Weds and Thurs.
ReplyDeleteBoth days I made pasta for dinner--night #1 I had sun dried tomatoes, spinach, and pine nuts. Night #2 I was out of spinach, so just had it with the sun dried toms and pine nuts. But both nights, I made a smoothie with raspberries, mango, soymilk and flax seed.
For lunch on Weds I had a Subway veggie pattie, on whole grain bread, with lettuce, tomatoes, cucumbers, olives, shredded carrots, banana peppers, green bell peppers, and giardinara sauce (a hot sauce made with cauliflower, hot peppers, carrots, etc.)
On Thurs for lunch I went to Taste of Chicago (outdoor festival) and had a barbeque seitan thingie on a stick, a cup of gazpacho, sweet potato pie, and sticky rice with mango.
I don't eat breakfast. But coffee is a vegetable...
By the way, I think half IS a serving. "Servings" are smaller than you think; I'm inevitably surprised.
ReplyDeleteI made veg spaghetti for Beverly, Audrey and Charles. Saute'd onions and crumbled veggie patties and added sauce (Safeway Select). Bev made a salad to which I added chopped onions and sweet peppers. I also am eating edamames instead of nuts for snacks.

ReplyDeleteIt's hard for me to figure out how to fit more veggies and fruits into my diet, because frankly, they're already the vast majority of it. I eat almost no grains usually (though I got in the bread habit in Germany due to lack of other options, and I've found myself eating more wheat products than normal as a consequence), and though I do eat beans (including soyproducts), it's usually no more than a couple of servings a day.
But in the spirit of things, I bought a case of V-8 at Costco yesterday. I forgot how much I love V-8, especially with either a squirt of Tobasco, or a squeeze of fresh lemon juice. And the can claims that each one is "half" your daily requirement of veggies--so I'm guessing that's 2.5 servings. A quarter of your daily intake of sodium though; wish they sold the low-salt version in cans at Costco.
I did stock up on salad fixins, too, so am back to a daily Jethro salad. I have no idea how many "servings" are in it, but I weighed all the veggies (mixed greens, tomatoes, bell peppers, cucumber, radish, avocado) and it weighed over a pound (17.5 ozs) before I even dressed it with balsamic vinegar.
I could have bought a V-8!
ReplyDeleteSorry, I've been out with July 4 fireworks festivities (and recovery) I have not been very successful with the veggies but I'm going to say it was because I have been not in control of meal choices for the last four days (well I guess I was control yesterday but all I had the energy to fix was lima beans and corn (protein and grain doesn't count)
ReplyDeleteI am stopping by Grocery Store Outlet this evening and will get more greens and other veggies. I really want to try because I know I dont' eat enough, I am definately a carbo loader.

I'm conflicted on this, myself. How about we say that beans and grains count, EXCEPT for refined white grains (white rice, white pasta, seitan), and soy products?
ReplyDeleteSo if you eat garbanzos, or fresh corn, or brown rice, that gets to count? But say that beans/grains cannot count for more than, say, 1/3 of your veggie/fruit goal?
I say this because I made a huge vat of hummus last night for dinner (burp!) It was deeee-licious.
Does fruit count? I have a smoothie every morning and I snack on fruit. Last night I finished up my pasta salad (whole wheat pasta, artichoke hearts, mushrooms, black olives, and diced tomatoes). I ate it hot the first night, but preferred it cold out of the fridge.
ReplyDeleteDefinitely, fruit counts! I've been having a fruit smoothie at night (usually mango, black raspberries, pomegranate juice, soymilk, flax seed--and hell, sometimes a slug of triple sec) because it's hot in my apartment and I'm too lazy to actually make dinner.
