What I've Done with UncleSam's Leftovers

Uncle Sam left a lot of delicious leftover vegan ingredients. So far, I have made (listing only the ingredients she left behind):

a nice sambar (recipe earlier in the blog) using celery, onions, potatoes, carrots, zucchini

a mock chicken salad using tofu, celery, green pepper, Veganaise, and Bacos (served on spring mix--though that was on its last legs)

lentil soup using onions, potatoes, carrots, celery

cut cantelope as a side dish

I also ate her leftover bechamel/macaroni/fake meat casserole thingie.

It's been a lot of fun trying to use it all up so it doesn't go bad. It made me think that there should be a reality tv chef show where the contestants have to show up in a randomly selected US household and cook a meal using whatever happens to be in the fridge and pantry.

  1. I'm very glad you were able to use everything especially the zucchini, Momcat bought that thinking they were cucumbers. Did I mention that there were NO vegetables, fresh frozed or canned at Momcat's house before I got there? No fruit either, not even an apple or orange. I would like to challange Momcat to eat at least 3 non-white potato servings of vegetables a day for a month. To be fun Roothy, Kipsy and I should join in with 5 different vegetable servings a day (which is the minimum you're supposed to have). Which means you can't have all five as salad greens and only 1 serving of salad mixins, It has to be 5 different dishes of a regular serving size each so for instance, my smoothie in the morning which has 3 different frozen fruits thrown in counts as one fruit since the fruit combined is only 1 cup, the rest is soy milk and flax. Are you up for it everyone?

  2. Can we do it after June 24th? Because Kipsy and I are going be eating pretty much nothing but salad greens and potatoes for the next two weeks! (Or does beer get to count as a vegetable?)

  3. Absolutely, I was going to suggest we do it the month of July. (Beer doesn't get to count as a vegetable but you could argue for a grain though). I didn't include Chip on this but I think she along with her 3 kittens should try too.

  5. Did Kipsy and I tell you about going to a beer garden in Munich and ordering a plate of veggies, making VERY clear we wanted "no meat, no butter, no cheese"?

    They served a lovely, truly marvelous, plate of vegetables... with a fried egg on top.

  7. I haven't bought a lot of food because I will be gone for most of July. I have eaten veggie fare when I eat out, When I get back from London I will put in some proper groceries. We are getting a Whole Foods market near Central Market which will help. How long does tofu lst - I have a package of that. and what do I put the nutritional yeast on?

  8. You can freeze the tofu. I mostly cook with my nutritional yeast.

  9. I add nutritional yeast to my broths when making soups or steaming greens(then I eat the broth like a consume.
