I attended a vegan cooking class Monday night and got some new recipes as well as info about various products. I bought stick margarine and vegetable stock cubes as well as a vegetarian cookbook. I am still partial to my macaroni salad but will try something new for potluck at church.
The spice cardamom was recommended but it is outrageously expensive.

I had heard about this book; thanks for the link. Cardamom is cheap; just buy in bulk at an Indian food store (that one on Woodway Drive will sell you a huge bag of it for five bucks. Or, I'll bring you some the next time I see you.) I use it instead of cinnamon a lot, because cinnamon is a bit overpowering, and cardamom, in addition to being more subtle, has a nice citrusy tang to it.
ReplyDeleteOh, I made a delicious peanut-better-kale soup yesterday. For those of you (like momcat) who hate greens, this is an excellent way to eat them. If you are interested, I will post the recipe.

ReplyDeleteI just read about the book in "The Week". It looks like a difficult read and I don't think I could handle it but I hope others do read it. I actually think that meat eaters should be more aware of actually how their steak gets on their plate.
ReplyDeleteI have been adding frozen chopped greens to my soups. According to WIC the greens mixed with the beans makes the iron in both fully absorbable.
